Time for a trip down under and sample the cuisine of Australia. The food has been influenced by many cultures and cities including Malaysia, China, Singapore and Japan all of which dominate many parts of the Australian food scene.

Executive Chef Ignacio Uribe and Sous Chef Hugo Mejia have melded there ideas for Australian cuisine during the Weekly Special Dinner Menu which runs February 2 to 8, 2015 and dinner is served from 5 to 11pm every night.

Here's a look at what's on the menu:

*Laksa Lemak - Mussel Soup with Vermicelli Rice Noodles and Bean Sprouts
*Shrimp and Pork Dumplings with Sambal and Soy Sauce
*Bacon and Cherry Tomato Skewers with warm vinaigrette and Mushroom Skewers with Lemon

*Rum and Lemongrass Roast Pork Belly
*Hainanese Chicken with Jazmin Rice, Cucumbers, Ginger and Onion
*Prawn Sambal served with Rice

Chocolate Pecan Tart
Mint Granita with Watermelon and Cantaloupe
