This salad is one of the most popular menu items at Daiquiri Dick's. It has a great balance of flavors and people continue to rave about it.
1/2 Cup Julienned Jicama
1/4 Cup Cilantro Leaves
1/2 Cup Green Onions, cut on the bias
1/4 Cup Slivered Almonds
1/4 Cup Toasted Sesame Seeds
1/4 Cup Snow Peas, cooked and sliced diagonally
1 Pound Chicken Breast, poached slowly, cooled and shredded by hand
Mix all ingredients together in a bowl and chill.
Honey Ginger Dressing
1 TB Soy Sauce
1 TB Honey or Sugar
1 TB Fresh Grated Ginger (you can certainly add more if you like)
1 Garlic Clove
3 TB Rice Vinegar
Combine all in blender. Then in a slow stream add:
1 TB Sesame Oil
1/2 Cup Peanut or Canola Oil
Adjust oils and seasonings to taste.
Toss the salad with the dressing to a consistency that is desirable. Remember with sauces and salad dressings, less is often more. If it drowns the ingredients, it will overwhelm the flavors. This dressing also works well as a sauce or drizzle for vegetables.
